Peach Cobbler
I cooked this for Shawn, a co-worker who is leaving to go on rotation at the Pentagon for a couple of months. It is the first time I have ever cooked peach cobbler and I got the recipe from a You Tube Video:
Filling Ingredients:
6 cups of thinly sliced peaches
1/4 cup water
1 1/2 cups sugar
3/4 tablespoon flour
1/2 cup sugar
Pinch of salt
Pinch of cinnamon
Pinch of nutmeg
Pinch of allspice
Directions:
Preheat oven to 400 degrees.
1. Put the peaches, 6 cups of sugar, and 1/4 cup water in a sauce pan and heat on medium high until the peaches come to a rapid boil.
2. Lower the temperature and let them cook until they are a bit soft, but not mushy.
3. In a seperate bowl, combine the 3/4 tbs. flour, 1/2 cup sugar, salt, cinnamon, allspice, and nutmeg. Mix with fork.
4. Add this mixture to the peaches and stir (still over heat) until the peach mixture becomes a bit thicker, like peach pie filling.
5. Pour the peach filling into a dish.
Topping Ingredients:
1 cup flour
1/2 cup sugar
1/2 tsp. salt
2 tsp. fresh baking powder
3/4 cup milk
Topping Directions:
1. Mix ingredients in a bowl
2. Spread on top of cobbler with a spoon- Jackson Pollock style
3. Cook the cobbler at 400 degrees for 45 minutes, until browned
